My guest Chefs, The Brothers Green, Potato Latke Frittata recipe!

Last night on The Chelsea Krost Show I had the brother chefs of the hit show, Midnight munchies, which airs on the YOUTUBE channel Hungry. They made me very hungry with all of their delicious recipes and they were a blast on air. Potato Latke Frittata – “Midnight Munchies” The Brothers Green

4 large russet potatoes
6 sweet Italian sausages, casings removed
8 eggs
1/4 cup Lager beer
Salt and pepper, to taste
3 cups fresh baby spinach
1 cup shredded cheddar cheese
1 pint cherry tomatoes, cut in half
1 tablespoon olive oil
Spicy Zip, recipe below

1.Preheat oven to 400F. Preheat a 10-inch cast iron skillet over medium high heat.
2.Shred potatoes, place in a paper towel and squeeze them dry of excess moisture.
3.On a piece of parchment paper form the sausage into a 10-inch patty. Transfer sausage patty to preheated skillet and cook until brown on both sides. Remove to a paper towel lined plate. Keep rendered fat in skillet for cooking potatoes.
4.Whisk together eggs, beer, salt and pepper. Set aside.
5.Put shredded potatoes in hot skillet and press evenly to the edge of the pan. Cook on both sides until browned. Add spinach to the top of the cooked potatoes, followed by sausage patty and egg mixture. Sprinkle top with cheddar cheese, cherry tomatoes, olive oil, salt and pepper. Bake in the oven 20-25 minutes, until the egg is set. Serve with spicy zip.
Serves 6-8

Spicy Zip
1/2 cup ketchup
1/2 sriracha
1/4 cup apple cider vinegar

1.Combine all ingredients in a squeeze bottle and shake to combine.
